Es ist eine der \u00e4ltesten Methoden und Brot zu backen. Fr\u00fcher, als es noch keine Backhefe gab, wurde NUR mit Sauerteig gebacken. Wer aber schon viel Erfahrung mit Hefebrot hat, dem wird das Sauerteigbrot auf Anhieb wahrscheinlich etwas besser gelingen. Sauerteigbrot wird meistens mit einem h\u00f6heren Wasseranteil als klassisches Brot zubereitet, was es sehr luftig macht, aber etwas schwieriger in der Handhabung. Man spricht dabei von <strong>Hydration<\/strong>! <\/p>\n\n\n\n<p>Sauerteigbrot wird normalerweise mit einer Hydration von 60-90% zubereitet. Mein Rezept weist eine Hydration von 66% auf, d.h. die Menge an Wasser betr\u00e4gt 66 Protzen des Gewichts an Mehl. Dies ist ideal f\u00fcr Anf\u00e4nger. Dieses hat einen h\u00f6heren Protein- und Glutengehalt, als herk\u00f6mmliches Weissmehl. Den Teig einmal \u00fcber sich selbst falten, sodass die bemehlte Fl\u00e4che aussen bleibt. Nun das vor dir liegende Teigdrittel hochziehen und \u00fcber das mittlere Teigdrittel falten. Diesen Schritt mit dem rechten, linken und oberen Drittel wiederholen. Daf\u00fcr schneide ich es bereits in einzelne Scheiben und packe diese in einen Gefrierbeutel. Mann kann dan direkt einzelne Scheiben gefroren im Toaster auftauen.
