The fastest way to cook asparagus is to fry it with a splash of olive oil in a pan! With this stove top method, the fresh asparagus spears remain particularly crisp. Season it with a blend of lemon juice, mustard, herbs, salt, and pepper to bring out the vegetable’s natural flavor.

You can serve the roasted asparagus as a side dish with pasta, rice, potatoes, or protein. It’s also especially delicious as an appetizer if you top it with shaved Parmesan, burrata cheese, or a poached egg just before serving. Toasted almonds or pine nuts can be used too!
You don’t really need a sauce with this recipe. If you still feel like adding one, I recommend chimichurri, sauce hollandaise, or herb butter.

- Olive Oil → To pan fry asparagus! Substitute with another vegetable oil or butter.
- Lemon Juice → Adds freshness to this vegetable side dish! Add lemon zest for an extra fresh taste.
- Maple Syrup → Softens the bitter taste of asparagus. Honey or sugar work too.
- Mustard, Salt, Pepper → For seasoning.

- Wash asparagus and break off the tough woody ends.
- Heat a large skillet with ½ tbsp olive oil over medium heat. Add asparagus and roast for 5 minutes, stirring occasionally. → If you double the recipe, work in batches.
- Add minced shallot and minced garlic, sauté for another 5 minutes.
- Mix ½ tbsp olive oil, fresh lemon juice, maple syrup, mustard, herbs, salt, and pepper in a small bowl. Add the sauce to the skillet and toss well.
- Serve warm!
- Hint: I love to place fried asparagus stems on a serving platter and sprinkle with shaved parmesan cheese or burrata cheese.

- 1 small shallot minced
- 1 clove garlic minced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp mustard
- 1 tsp maple syrup
- 1 tsp dried Italian herbs
- ¼ tsp salt
- ¼ TL black pepper
Instructions
- Wash asparagus and break off the tough woody ends.
