Homemade Caesar Dressing (Vegetarian - without Anchovies)

Ingredients
 

  • ½ cup (75 g) cashew nuts see notes
  • cup (100 ml) water
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 4 tbsp Parmesan cheese grated VEGAN Version: use 4 tbsp nutritional yeast
  • 1 tbsp capers
  • 1 clove garlic sliced
  • 1 tsp dijon mustard
  • ¼ tsp salt or more to taste
  • ¼ tsp black pepper or more to taste

Instructions
 

  • Add all ingredients in a high-speed blender and blend until smooth. → If the dressing is too thick for your liking, dilute it with a little more water.
  • Drizzle over a Caesar Salad or use it for a salad of your choice (delicious with pasta salad).

Notes

Enough for 4 Caesar Salads.
Keeps fresh for a week if stored in a mason jar in the refrigerator. The dressing likes to thicken a little in the refrigerator - you can dilute it with a little water before serving.
Serving Suggestion: Tastes delicious with Caesar salad, kale salad, any kind of lettuce, pasta salad or potato salad.
Cashew Nuts: No need to soak cashew nuts if you have a high speed blender. However, if your blender doesn't have too much power, I recommend soaking the cashew nuts in hot water for 10 minutes.
