Pan Fried Asparagus

Ingredients
 

  • 1 lb (500 g) asparagus
  • 1 small shallot minced
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp mustard
  • 1 tsp maple syrup
  • 1 tsp dried Italian herbs
  • ¼ tsp salt
  • ¼ TL black pepper

Instructions
 

  • Wash asparagus and break off the tough woody ends.
  • Heat a skillet with ½ tbsp olive oil. Add asparagus and roast for 5 minutes, stirring occasionally.
  • Add minced shallot and garlic, sauté for another 5 minutes.
  • In a small bowl, mix ½ tbsp olive oil, lemon juice, maple syrup, mustard, herbs, salt, and pepper. Add the sauce to the skillet and toss well.
  • Serve warm! I love to sprinkle the asparagus with shaved parmesan or burrata cheese.

Notes

  • Keeps fresh for 3 days. Store it in an airtight container in the refrigerator.
  • Use leftovers as a salad topping!
