Pan Fried Asparagus

Wash asparagus and break off the tough woody ends.
Heat a skillet with ½ tbsp olive oil. Add asparagus and roast for 5 minutes, stirring occasionally.
Add minced shallot and garlic, sauté for another 5 minutes.
In a small bowl, mix ½ tbsp olive oil, lemon juice, maple syrup, mustard, herbs, salt, and pepper. Add the sauce to the skillet and toss well.
Serve warm! I love to sprinkle the asparagus with shaved parmesan or burrata cheese.
- Keeps fresh for 3 days. Store it in an airtight container in the refrigerator.
- Use leftovers as a salad topping!
