Instructions
Preheat the oven to 350°F (180°C). Line a square 8x8 inch (20x20 cm) baking pan with parchment paper or grease it lightly.
Melt the butter and chocolate together in the microwave or over a water bath. Make sure it’s not too hot - if needed, let it cool for a few minutes.
Add the melted chocolate mixture, cottage cheese, egg, milk, cocoa powder, sugar, and vanilla extract to a food processor. Blend until smooth.
In a separate bowl, combine the flour, baking powder, and salt. Add the wet ingredients and stir using a spatula until just combined.
Pour the batter into your prepared pan and smooth out the top. If you like, sprinkle with extra chocolate chips.
Bake for 25 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs.
Let cool completely before slicing into 16 brownies. Enjoy!
Notes
Sweeter brownies:
Just double the amount of sugar if you like your brownies sweeter.
