Peel and dice the sweet potato. Place it in a bowl with the olive oil, paprika, salt, and pepper. Toss well to coat.
Air fry in a preheated air fryer at 400 °F (200 °C) for about 10 minutes.Alternatively, roast them in the oven at 425°F (220°C, fan) for 25–30 minutes.
Meanwhile, heat a skillet with olive oil. Add the ground beef, taco seasoning, and tomato paste. Cook for about 8 minutes, stirring occasionally.
Add the sweet potatoes, avocado, ground beef, and cottage cheese to a bowl. Drizzle with hot honey and enjoy!

Avocado: Sometimes I use only half an avocado to make this bowl!
You can whip up your own hot honey sauce in just 2 minutes.
All you need is:
4 tablespoons runny honey
2 teaspoons hot sauce (I love using Frank’s RedHot)
¼ teaspoon red pepper flakes
Just mix everything together in a small jar, give it a good shake, and you’re done!
