Peel and wash the potatoes. Cut them into 2 cm pieces.
Steam your potatoes for 35 minutes at 96°C/205°F. If you don't have a steamer, you can cook them in a pot with hot water for 20 minutes.
Meanwhile, heat up the milk and butter in a pot until hot.
Transfer the potatoes to your kitchen machine, add the hot milk-butter mixture and mash it with the K Hook (Kenwood), Flat Beater (Kitchenaid) or a Potato Masher.
Season it with salt, pepper, and some fresh muscat nut powder.
