Carefully peel the pears, but leave the stem intact. Cut in half and scoop out the seeds using a spoon.
Mix the maple syrup, vanilla extract, and ground cinnamon in a small bowl until evenly combined.
Place the pears in a baking dish and pour over the maple syrup mixture. Bake for 20-30 minutes until soft and caramelized.
Let them cool for a few minutes and serve each two with a scoop of vanilla ice cream. You can pour a little more maple syrup over the ice cream if you wish.
