Winter Citrus Salad with Arugula and Avocado

This winter citrus salad with arugula, avocado, orange, grapefruit, and toasted walnuts is the perfect winter salad!

Ingredients
 

  • 3.5 oz (100 g) arugula
  • 1 avocado
  • 1 orange
  • 1 blood orange
  • 1 grapefruit
  • cup (30 g) walnuts

Dressing

  • 2 tbsp olive oil
  • 2 tbsp orange juice
  • 1 tsp Maple syrup
  • salt & pepper

Instructions
 

  • Roughly chop and toast the walnuts in a skillet over medium heat until golden brown and fragrant.
  • Finely slice the avocado. Peel and slice the oranges and grapefruit. → Press excess orange juice from the peel to use for the dressing.
  • In a small bowl, whisk together all dressing ingredients, and season with salt and pepper.
  • Arrange arugula, avocado, oranges, and grapefruit on a serving platter. Top with toasted walnuts and drizzle with the dressing.

Notes

Dinner: Top it with protein to serve as a dinner for two. Vegan protein options: Vegan Feta Cheese or Vegan Chicken Alternative.
Tipp: Add a few splashes of balsamic cream!
