Roughly chop and toast the walnuts in a skillet over medium heat until golden brown and fragrant.
Finely slice the avocado. Peel and slice the oranges and grapefruit. → Press excess orange juice from the peel to use for the dressing.
In a small bowl, whisk together all dressing ingredients, and season with salt and pepper.
Arrange arugula, avocado, oranges, and grapefruit on a serving platter. Top with toasted walnuts and drizzle with the dressing.
