Grilled Asparagus

Ingredients
 

  • 2 pound (900 g) green asparagus
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • ½ tbsp mustard
  • ½ tbsp maple syrup
  • ½ tbsp Italian seasoning or a blend of dried thyme, sage, basil, rosemary, sage (simply use what's in your spice rack)
  • ½ tsp salt
  • tsp black pepper

Instructions
 

  • Preheat grill or grill pan over medium-high heat.
  • Snap the rough ends of the asparagus and discard.
  • Place asparagus with all other ingredients in a Ziploc bag (or in a deep baking dish) and gently massage so that the marinade is evenly distributed. → Grill it right away or let it marinate for up to one day in the refrigerator!
  • Grill asparagus for 5-10 minutes over medium-high heat or to desired tenderness, turning occasionally. → Grilling time depends on the thickness of the asparagus.

Notes

  • Keeps fresh for 2 days. Store it in an airtight container in the refrigerator. 
  • Leftovers make a great addition to salad (especially quinoa salad).
  • This chimichurri sauce recipe goes well with grilled asparagus!
