Ingredients
 

Oatmeal

  • ½ cup (45g) whole grain rolled oats
  • ¾ cup (180ml) soy milk or any other plant-base milk

Caramelized Banana

  • 1 tbsp coconut oil or plant-based butter
  • 1 tbsp maple syrup or agave syrup, coconut blossom syrup, brown sugar
  • 1 banana

Toppings

  • 1 tbsp pecan nuts chopped
  • ½ tsp cinnamon powder

Instructions
 

Oatmeal

  • Bring the plant-based milk to a boil using a small pot. Add the rolled oats, stir well, and let it simmer at medium heat for about 5 minutes.

Caramelized Banana

  • Heat a skillet over medium-high heat. Add the coconut oil and sugar and cook for about 3 minutes.
  • Chopp the bananas in slices or lengthwise add into the skillet and caramelize each side for about 2 minutes.
  • Transfer the oatmeal into a bowl, top it with the caramelized banana, chopped nuts, and cinnamon powder.

Notes

  • Cook the oatmeal in the microwave to speed up the cooking time.
  • Use water instead of soy milk for a healthier breakfast.
