This udon stir fry is incredibly delicious and made in such a short time. I like to call it the perfect Japanese dinner recipe.

  • 2 servings udon noodles
  • 2.5 cups (200g) broccoli florets
  • 1 cup (70g) fresh shiitake mushrooms sliced
  • 2 tbsp ginger minced
  • 2 cloves garlic minced
  • 4 scallions chopped
  • 1 tbsp sesame seeds

Stir Fry Sauce


  • Make the udon noodles according to this recipe or use storebought ones and prepare according to the label.
  • Heat a skillet with some oil and cook the broccoli florets, shiitake, ginger, and garlic for 5 minutes over medium heat.
  • Meanwhile, mix all the ingredients for the stir fry sauce. Add it with the udon noodles and scallions to the skillet. Cook everything while continually stirring for 1 minute. Top it with sesame seeds before serving.
