Ingredients
 

  • 1 tbsp oil
  • 2 servings udon noodles 14oz precooked udon noodles
  • 2 ½ cups (200 g) broccoli florets
  • 1 cup (70 g) fresh shiitake mushrooms sliced
  • 2 tbsp ginger minced
  • 2 cloves garlic minced
  • 2 scallions chopped
  • 1 tbsp sesame seeds

Stir Fry Sauce

Instructions
 

  • Prepare homemade udon noodles according to this recipe. You can also use store-bought precooked udon noodles.
  • Heat a wok or large skillet with oil. Add broccoli florets, shiitake, ginger, and garlic, stir-fry for 5 minutes.
  • Mix all sauce ingredients in a small bowl. Add them with the noodles and scallions to the wok. Stir-fry for another minute.
  • Garnish with sesame seeds before serving. Enjoy!

Notes

  • Leftovers: Stored in an airtight container in the fridge, the noodles stay fresh for 2 days. Reheat in a wok, skillet, or microwave.
