Ingredients
 

Braised balsamic red cabbage

  • 1 (1) purple carrot alternative orange carrot, peeled and coarsely grated
  • 80 g (0.9 cups) red cabbage sliced thinly
  • 1 tbsp (1 tbsp) olive oil
  • 1 tbsp (1 tbsp) sugar
  • 2 tbsp (2 tbsp) balsamic vinegar
  • salt & pepper

Organic Salmon

  • 100 g (100 g) organic salmon
  • 1 tbsp (1 tbsp) butter
  • 1 clove (1 clove) garlic cut into half
  • ½ (0.5) lemon zest only
  • Épices de la Mer fish spice from Coop Fine Food

Instructions
 

Braised balsamic red cabbage

  • Peel and coarsely grate the carrot and slice the red cabbage very thin.
  • Preheat a pan over medium heat with 1 tbsp olive oil. Place the carrot and cabbage in the pan and cook for 2 minutes. Add the sugar and cook for another 2 minutes. Add the balsamic vinegar and cook for about 5 minutes.
  • Season with salt and pepper.

Organic Salmon

  • Wash the salmon under cold water and dry it with a paper towel.
  • Rub the inside of a non-stick frying pan with the garlic halves and preheat it over medium heat. Place the butter and garlic* in the pan. Add the salmon and cook each side for about 2 minutes.
  • Meanwhile, place the braised balsamic red cabbage on a plate. Add the fried salmon on top, sprinkle with the lemon zest and Épices de la Mer.

Notes

The garlic is just for the taste of the salmon, you do not have to eat it.
