  1. Roasted Cauliflower: Trim, wash, and cut the cauliflower into bite-sized florets. In a bowl, mix yogurt, oil, garlic, ginger, and the remaining spices for the roasted cauliflower. Add the cauliflower florets and toss well!

Roasted Cauliflower

  • 28 oz cauliflower, in florets
  • 1⅝ cup Greek yogurt or dairy-free yogurt
  • 1 tablespoon oil
  • 1 small clove garlic, grated
  • 1 teaspoon ginger, grated
  • 2 teaspoon garam masala spice mix, see notes
  • ½ teaspoon smoked paprika, or paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ¼ teaspoon salt
  • ¼ teaspoon cayenne pepper, omit if you don't like it hot

Tikka Masala

  • 1 tablespoon oil
  • 1 onion, minced
  • 2 cloves garlic, grated
  • 1 teaspoon ginger, grated
  • 2 tablespoon garam masala spice mix, remaining mix if homemade according to the notes
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • ¼ teaspoon cayenne pepper, omit if you don't like it hot
  • 1 x14 oz can tomato passata
  • ½ cup water
  • cup heavy cream or dairy-free cream (soy or oat)
  • 1 teaspoon sugar

Instructions
 

  • Preheat the oven to 390°F (200°C).

Notes

For those who don’t like it spicy, omit the cayenne pepper. You can also reduce the amount of ginger and garlic, which makes the Tikka Masala a bit milder in taste.
Homemade Garam Masala Spice Mix:
