- Roasted Cauliflower: Trim, wash, and cut the cauliflower into bite-sized florets. In a bowl, mix yogurt, oil, garlic, ginger, and the remaining spices for the roasted cauliflower. Add the cauliflower florets and toss well!
- Spread the cauliflower on a baking sheet lined with parchment paper and bake for 20 minutes until golden brown.

- Tikka Masala: Heat a pan with 1 tablespoon of oil. Add onion and sautรฉ over medium heat for 3 minutes. Add garlic and ginger, and sautรฉ for another 30 seconds. Add the spices, and sautรฉ for another 30 seconds.
- Add tomato passata and water, let it simmer on low heat for 10 minutes.
- Season with cream and sugar. Stir in the roasted cauliflower and let it warm up.

Ingredients
Roasted Cauliflower
- 28 oz cauliflower, in florets
- 1โ cup Greek yogurt or dairy-free yogurt
- 1 tbsp oil
- 1 small clove garlic, grated
- 1 tsp ginger, grated
- 2 tsp garam masala spice mix, see notes
- ยฝ tsp smoked paprika, or paprika
- ยฝ tsp ground cumin
- ยฝ tsp ground coriander
- ยผ tsp salt
- ยผ tsp cayenne pepper, omit if you don't like it hot
Tikka Masala
- 1 tbsp oil
- 1 onion, minced
- 2 cloves garlic, grated
- 1 tsp ginger, grated
- 2 tbsp garam masala spice mix, remaining mix if homemade according to the notes
- ยฝ tsp ground cumin
- ยฝ tsp ground coriander
- ยฝ tsp ground turmeric
- ยผ tsp cayenne pepper, omit if you don't like it hot
- 1 x14 oz can tomato passata
- ยฝ cup water
- โ cup heavy cream or dairy-free cream (soy or oat)
- 1 tsp sugar
Instructions
- Preheat the oven to 390ยฐF (200ยฐC).
