It’s my go-to alternative to sugary store-bought popsicles, and I love keeping a stash in my freezer for a quick and satisfying snack. The recipe is very similar to my cottage cheese ice cream with banana!

- Cottage Cheese: The creamy base that packs in the protein. I recommend using full-fat cottage cheese for the best texture.

- Honey: Just a little bit for natural sweetness. You can adjust the amount or use maple syrup instead.
- Vanilla Extract: Optional, but it gives the popsicles a delicious, rounded flavor.
- Toppings: Melted dark chocolate and crushed freeze-dried raspberries – totally optional, but so pretty and you’ll love that chocolate crunch…!

How To Make

Measure Your Ingredients
Add cottage cheese, frozen raspberries, honey, and vanilla extract to a mixing cup/blender.

Blend
Use an immersion blender (or regular blender) to blend everything into a smooth, creamy mixture.

Fill Your Molds
Spoon the mixture into your popsicle molds and smooth the surface. Freeze for at least 4 hours or until solid.

Add Toppings
Once frozen, drizzle with melted chocolate and quickly sprinkle with crushed freeze-dried raspberries.
Tips for Success
- Let them thaw a little: If the popsicles have been in the freezer for a while, let them sit at room temperature for 5–10 minutes before eating for the best texture.
- Sweetness: Use up to 1 tablespoon of honey if you like them sweeter. Taste after blending and adjust as needed.
- Topping: You can fully dip them in chocolate for a decadent treat – but keep in mind that this will increase the calories from 63 to around 200 per pop.

Ingredients
Ice Cream
- ⅝ cup cottage cheese, 4%
- ⅓ cup frozen raspberries, or strawberries
- ½ tablespoon honey
- ½ teaspoon vanilla extract
Toppings
- 1 tablespoon dark chocolate chips
- ¼ teaspoon coconut oil
- some freeze-dried raspberries, optional
Instructions
- Blend cottage cheese, frozen raspberries, honey, and vanilla extract using an immersion blender.
- Spoon the mixture into your popsicle molds and smooth the surface.
- Freeze for at least 4 hours or until solid.
- Melt the chocolate and coconut oil together over a water bath.
- Once the popsicles are fully frozen, drizzle them with the melted chocolate and immediately sprinkle with crushed freeze-dried raspberries before the chocolate sets. Enjoy
- Let the chocolate set for a moment, then enjoy right away or place the popsicles back in the freezer. If they've been in the freezer for a longer time, let them sit at room temperature for 5–10 minutes before serving so they’re not too icy.
Notes
- Popsicle Mold: I use this mini silicone popsicle mold. Each mold holds 1.25 ounces. If you’re using a larger mold, you’ll need to adjust the measurements accordingly.
- Raspberries: You can make these popsicles with raspberries or strawberries – both work great! I prefer using frozen berries, but fresh ones will also do the trick.
- Sweetness: If you like it a bit sweeter, use 1 tablespoon of honey. Feel free to taste the mixture after blending and add more sweetener if needed.
- Topping: Totally optional, but so good with the chocolate! You could even dip the entire popsicle in chocolate – just keep in mind that this will turn your 63-calorie treat into a roughly 200-calorie indulgence.
