  • 2 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 small onion, minced
  • 2 lb tomatoes, diced
  • 2 teaspoon dried Italian herbs, rosemary, basil, oregano, sage, thyme
  • ½ teaspoon salt, or more to taste
  • ¼ teaspoon sugar
  • a pinch of black pepper, to taste
  • a handful of fresh basil leaves, chopped
  • 1 tablespoon tomato paste, optional

  • Heat a large pot with olive oil. Add garlic and onion and sauté for a few minutes until translucent and fragrant.

    Absolutely lovely and flavourful! I prefer a smooth sauce, so I whizzed all the ingredients together before putting it on the stove, which, incidentally, cut cooking time, and whizzed it again once cooked. Without a doubt the best recipe I have tried thus far. Am now making a double batch to store.
