    Healthy & Quick No Yeast Bread

    This healthy and quick no yeast bread is made and baked within one hour! A recipe for all who love healthy homemade bread but have little time for baking.

    Homemade, healthy, no yeast, quick to make, no kneading, – what do you want more? This bread is completely yeast-free and, therefore, doesn’t need time to rise. 

    What more to say, this bread is simply amazing! It’s the perfect recipe for quick bread and ready to eat on the table within one hour! It’s made with whole-grain flour, seeds, and nuts, and therefore counts as healthy bread.

    Quickest Bread

    But what is the secret of this quick bread recipe? It’s made with baking powder instead of yeast, which makes this bread rise nicely in the oven and saves you the long rising time you are used to from yeast bread.

    Plus, no need for a stand mixer. A large bowl, cup measuring set, spoon, and a 9-inch (25cm) loaf pan is all you need.

    Measure, stir, bake, done! Baking bread without yeast is so easy! It’s an excellent recipe for all bread baking beginners and bread lovers with little time for baking!

    All you have to do is mix all the ingredients in a large bowl (takes 5 minutes), fill it into the loaf pan, sprinkle some rolled oats on top, and bake it for 50 minutes.

    1-hour later, from start to finish, you will be rewarded with delicious bread with a crispy crust and a pleasant hearty taste with lots of healthy seeds and nuts.

    Whole Grain Flour & Seeds

    Thanks to the use of whole-grain flour, seeds, and nuts, this bread is not only healthy but also very aromatic. You can use it as sandwich bread, serve along with salad, or enjoy it for breakfast with this raspberry chia jam.

    It provides you with many vitamins and minerals and can be very well integrated into a healthy diet.

    Another advantage of this quick bread recipe is that it is super adjustable. You can choose between spelt, rye, and whole wheat flour. Or even a mixture of all three. It doesn’t matter which flour you choose, go with the one you have at home or like the most.

    Same rule applies for the seeds and nuts! You need about 1 cup of mixed seeds and nuts, so throw in your favorite ones to accommodate your taste.

    • Sesame Seeds
    • Poppy Seeds
    • Sunflower Seeds
    • Pumpkin Seeds
    • Hazelnuts
    • Almonds
    • Walnuts

    My favorite blend is:

    • ¼ cup sesame seeds (35g)
    • ¼ cup pumpkin seeds (35g)
    • 2 tbsp poppy seeds (10g)
    • â…“ cup almonds, hazelnuts, or walnuts (35g)

    How To Make This No Yeast Bread Recipe

    This step-by-step guide will help you along the way – definitely recommended if you’re a baking beginner!

    • Preheat the oven to 390°F (200°C).
    • Add flour, baking powder, salt, seeds, and nuts in a large bowl and mix using a spoon.

    • Pour in apple cider vinegar and sparkling water.

    • Stir until just combined (you don’t have to knead this bread).

    • The dough should be wet and sticky!

    • Grease a 10inch (25cm) loaf pan with one tablespoon oil and pour in the wet dough.

    • Sprinkle with rolled oats (optional).

    • Bake for 50 minutes until golden brown. Let it cool on a rack for 5 minutes, remove from the pan, and wait until completely cool before slicing. → If you don’t have time, cut the bread while it is still warm! 😉

    Recipe FAQ

    How long does it stay fresh? For 2 days if packed in a clean tea towel. → It becomes very soft if stored in a plastic bag. Therefore, the tea towel is the better option, unless you are going to toast it anyways.

    Can I freeze this bread? Of course! Freeze it in a freezer bag for up to 3 months. → You can slice the bread before freezing and thaw single slices in the toaster.

    Can I use tap water? Absolutely! The sparkling water helps to activate the baking powder and makes the bread fluffier! Don’t worry if you only have tap water, it works too.

    Ingredients
     

    • 2 cups (220 g) whole grain spelt flour or whole wheat flour, whole grain rye flour, or a mixture all three
    • 1 cup (130 g) all-purpose flour
    • 1 tbsp baking powder
    • 1 tsp salt
    • ~ 1 cup (115 g) mixed seeds and nuts see notes for exacet measurements I used
    • 1 tbsp apple cider vinegar
    • 1 ½ cup (360 g) sparkling water or tap water
    • 1 tbsp rolled oats
    • 1 tsp oil

    Instructions
     

    • Preheat the oven to 390°F (200°C).
    • Add flour, baking powder, salt, seeds, and nuts in a large bowl and mix using a spoon.
    • Pour in apple cider vinegar and sparkling water and stir until just combined (you don't have to knead this bread).

    • Seeds & Nuts: Mix and match whatever seeds and nuts you like or have at hand. I love this mixture:
      • ¼ cup sesame seeds (35g)
      • ¼ cup pumpkin seeds (35g)
      • 2 tbsp poppy seeds (10g)
      • â…“ cup almonds, hazelnuts, or walnuts (35g)
    • Sparkling Water: Helps to activate the baking powder and makes the bread fluffier! Don’t worry if you only have tap water, it works too.
    • Flour: You can choose 2 cups of whole-grain spelt flour, whole grain rye flour, or whole wheat flour, or a mixture of those three. This bread recipe is highly adjustable.
    • Keeps fresh for 2 days if packed in a tea towel.
    • Or freeze half of the bread right after baking for up to 3 months. → You can slice the bread before freezing and thaw single slices in the toaster.

      is it ok to use unsweet almond milk instead of water or a mixture of both?

        Hi Tamaira, I highly recommend using sparkling water for this bread recipe. You are free to try it out with milk, but it will alter the taste. 😇

      Do you have to use all that salt, and what about the all purpose flour, is that necessary.
      Is there another recipe with very little salt and only whole grain flour with no yeast. Thanks.

        Hi Miriam, yes, the salt (it’s only 1 teaspoon) is necessary for the taste. Feel free to make the recipe only with whole grain flour, but you need to add a little more water as whole grain flour absorbs more water than all-purpose flour. 😉
