Ingredients
See recipe card for quantities.
- Green Asparagus – Use fresh asparagus! Ideally, all the asparagus spears should have a similar thickness.
- Puff Pastry – Ensures crispy, buttery asparagus pockets!
- Plain Skyr Yogurt – This will add a creamy, tangy contrast to the crispy asparagus. It also works with plain Greek yogurt.
- Grated Cheese โ I recommend Gruyere cheese or Cheddar cheese! Parmesan cheese would work too.
- Olive Oil, Salt, Pepper – For marinating the asparagus.
- Egg & Nigella Seeds – For brushing and garnishing! Nigella seeds not only look beautiful but also give the asparagus bundles a unique flavor.

Variations
- Fill the asparagus puff pastry bundles with a slice of Brie cheese and a few drops of honey instead of yogurt and cheese.
- Stir a pinch of garlic powder or fresh herbs into the yogurt.
- Instead of nigella seeds, you can use sesame seeds, poppy seeds, or everything bagel seasoning as a topping. It also tastes great without any topping!
- Replace skyr yogurt with cream cheese for a richer taste (also more calorie-intense).
- For an Italian twist, spread a thin layer of pesto on the puff pastry before adding the asparagus.
- Use this recipe to make a homemade puff pastry dough.
