  • Green Asparagus – Use fresh asparagus! Ideally, all the asparagus spears should have a similar thickness.
  • Puff Pastry – Ensures crispy, buttery asparagus pockets!
  • Plain Skyr Yogurt – This will add a creamy, tangy contrast to the crispy asparagus. It also works with plain Greek yogurt.
  • Grated Cheese – I recommend Gruyere cheese or Cheddar cheese! Parmesan cheese would work too.
  • Olive Oil, Salt, Pepper – For marinating the asparagus.
  • Egg & Nigella Seeds – For brushing and garnishing! Nigella seeds not only look beautiful but also give the asparagus bundles a unique flavor.

This visual step-by-step instruction will help you along the way – definitely recommended if you’re a baking beginner!

  1. Wash the green asparagus, then snap off the woody ends. In a bowl, toss with olive oil, a pinch of salt, and pepper.
  2. Cut the puff pastry into 8 large rectangles, then add a dollop of the skyr yogurt to the middle of each one and slightly spread with the back of a spoon, leaving about ½” of room around the edges.

  1. Place 3-4 stalks of asparagus diagonally on the dough, then sprinkle cheese over them.
  2. Fold the two opposite corners of the puff pastry over the asparagus and press down slightly to prevent them from opening during baking.
  3. Place on a baking sheet lined with parchment paper. Brush puff pastry with egg wash and sprinkle some nigella seeds over the top.

  1. Bake in the preheated oven for 20-25 minutes until golden brown.

Variations

  • Fill the asparagus puff pastry bundles with a slice of Brie cheese and a few drops of honey instead of yogurt and cheese.
  • Stir a pinch of garlic powder or fresh herbs into the yogurt.
  • Instead of nigella seeds, you can use sesame seeds, poppy seeds, or everything bagel seasoning as a topping. It also tastes great without any topping!
  • Replace skyr yogurt with cream cheese for a richer taste (also more calorie-intense).
  • For an Italian twist, spread a thin layer of pesto on the puff pastry before adding the asparagus.
  • Use this recipe to make a homemade puff pastry dough.

Storage & Reheat Instructions

Leftovers can be stored in an airtight container or wrapped in aluminum foil in the fridge. They will stay fresh for 3 days.

If you prefer to enjoy leftovers warm, reheat the pockets for 15 minutes in a preheated oven at 400°F (200°C).

  • 1 tbsp olive oil
  • a pinch salt & pepper
  • 1 sheet puff pastry
  • cup (150 g) plain skyr yogurt or plain greek yogurt, cream cheese
  • ½ cup (50 g) grated cheese gruyère or cheddar
  • 1 egg beaten
  • some nigella seeds or sesame, poppy seeds

  • Preheat the oven to 400°F (200°C).
