And the best part? Doubling this recipe is a breeze for those larger gatherings or if you just can’t get enough. All you need is a slightly larger baking sheet.

  • Green Asparagus – The main ingredient! Look for stalks that are bright green and firm, with tight, closed tips. Thicker stalks are better for roasting as they’ll stay tender and juicy.
  • Cheese – While I suggest a mix of Parmesan cheese and mozzarella cheese, feel free to experiment with different types of cheese.
  • Garlic – Adds a wonderful garlic aroma. I love to use fresh garlic, but it also works with a pinch of garlic powder. If garlic isn’t your thing, just skip it.
  • Olive Oil – The asparagus needs some oil for roasting.
  • Salt & Pepper – To season! Feel free to use herb salt or other spices of your choice.

  1. Wash the asparagus, trim the woody ends, and spread them out on a baking sheet or baking dish (I prefer not to use parchment paper, but you can line the tray with it).
  2. Drizzle with olive oil, then sprinkle with garlic, a pinch of salt & pepper. Toss well.

  2. Remove the asparagus from the oven and preheat the broiler to 445°F (230°C).

  • ¾ cup (80 g) fresh mozzarella cheese cubed
  • ¼ cup (20 g) parmesan cheese grated

Notes

Cheese: You’ll need about 100g (roughly 3.5 oz) of cheese for this recipe. Feel free to customize the cheese blend to your liking. A sharp cheddar or a smoky Gouda can add a whole new dimension to the dish. Vegans can opt for vegan shredded cheese.
Doubling the recipe is super easy! Just use a slightly larger baking sheet.
Leftovers can be stored for 2 days in an airtight container in the fridge. Before serving, quickly reheat them in the oven to melt the cheese again.
