Creamy baked feta, juicy cherry tomatoes, and pasta come together with minimal effort for a comforting, crowd-pleasing dish. This is my version, finished with extra spinach for more veggies and flavor. Originally created by Finnish food blogger Liemessa, it proves that simple ingredients can make an incredibly delicious meal.

How To Make

  1. Place cherry tomatoes and frozen spinach in a baking dish. Place the feta in the middle and top it with chili. Drizzle with olive oil and season with a good pinch of salt and pepper.

  1. In the meantime, cook the tagliatelle according to the package instructions al dente. Drain and set aside.

Ingredients
 
 

  • 3.5 oz feta cheese
  • 7 oz cherry tomatoes
  • 1 ⅓ cup frozen spinach
  • ¼ cup olive oil
  • ½ mild red chili, optional, seeded & thinly sliced
  • salt & pepper
  • 7 oz tagliatelle, or pasta of choice

Instructions
 

  • Preheat the oven to 390°F/200°C.
  • Place cherry tomatoes and frozen spinach in a baking dish. Place the feta in the middle and top it with chili. Drizzle with olive oil and season with a good pinch of salt and pepper. Bake for 30 minutes in the preheated oven.
  • In the meantime, cook the tagliatelle according to the package instructions al dente. Drain and set aside.
  • Toss tagliatelle with the cooked feta & serve!

Notes

Keeps fresh for 3 days. Store it in an airtight container in the refrigerator.
Gluten-Free: Use gluten-free pasta!
Low FODMAP: This recipe (1 portion a day) is suitable for a low FODMAP diet IF you swap pasta with gluten-free pasta and omit the chili.
