This vegan puff pastry tart with strawberries is super easy and quick to prepare! It is the perfect dessert for warm summer days because it is very light, fruity, sweet, and flaky.

Bake a puff pastry sheet until golden brown, spread it with the whipped vegan custard, and decorate with halved fresh strawberries – that’s all the magic! If you want to take it a step further, make a homemade puff pastry according to this vegan rough puff pastry recipe

It’s not exactly a vegan custard you are spreading over the baked puff pastry, but somewhat similar and lighter. Instead of cooking the heavy cream with the rest of the ingredients, whip it and mix it with the custard. Makes for an airier topping.

BUT, if you prefer a real vegan custard, cook the heavy cream with the rest of the ingredients and add one additional tablespoon of cornstarch.

I really love this light summer tart with fresh strawberries! Feel free to swap strawberries with any other berries of your choice. It does taste delicious with blueberries, raspberries, or blackberries. 

Puff Pastry Strawberry Tart Recipe – Step-by-Step

This step-by-step guide will help you along the way – definitely recommended if you’re a baking beginner! The exact quantities and everything else you need to know for the recipe can be found in the recipe card below.

  • Vanilla Cream Topping: Add dairy-free milk, maple syrup, cornstarch, vanilla extract, and turmeric powder in a small saucepan and stir until the cornstarch is dissolved. Bring to a boil, while constantly stirring, until thickened. Remove from the heat and let it cool. ➝ Spread it on a plate to speed up the cooling process.
  • Whip the dairy-free whipping cream using an electric mixer until stiff peaks form. Add the vanilla cream and mix just until combined.

  • Preheat the oven to 390°F (200°C).
  • Roll out the puff pastry sheet and place it on a parchment-lined baking sheet. Score a ½ inch border from the edges (don’t cut all the way through the dough) and prick the center with a fork. Sprinkle the scored border with sugar.
  • Bake for 15-20 minutes until golden brown. Place the baked puff pastry sheet on a wire rack and let it cool completely.
  • Evenly spread the vanilla cream over the puff pastry sheet, leaving out the borders.
  • Wash, trim, and cut strawberries in half. Arrange them cut side down over the vanilla cream.

Strawberry Tart

  • 1 sheet puff pastry
  • ½ – 1 tbsp sugar
  • 12 oz (350 g) strawberries

Vanilla Cream

  • ½ cup (120 g) dairy-free milk
  • 2 tbsp (40 g) maple syrup
  • 1 tbsp (10 g) cornstarch
  • 1 tsp vanilla extract
  • a pinch turmeric powder
  • ½ cup (120 g) dairy-free whipping cream

  • Preheat the oven to 390°F (200°C).
